Visitors eager to experience the authentic flavours of Jharkhand are enjoying a rich culinary journey at the Institute of Hotel Management (IHM) Ranchi stall, set up under the banner of Jharkhand Tourism, according to an official from the Ministry of Tourism.
The stall highlights Jharkhand’s diverse food heritage, deeply rooted in tribal culture, rural lifestyles, and sustainable, millet-based diets. Its menu features a wide array of traditional and festive dishes that reflect everyday food practices across the state.
One of the most popular offerings is Dhuska with Aalo Chana ki Sabji — crispy fermented lentil and rice bread served with a hearty potato and chickpea curry, a comfort food cherished throughout Jharkhand.
Traditional sweets such as Arsha Pitha, prepared with rice flour and jaggery, showcase age-old festive recipes, while lesser-known indigenous snacks like Dumbu introduce visitors to the state’s unique culinary traditions.
A major highlight of the stall is its strong emphasis on millet-based cuisine, in line with national efforts to promote nutrition, sustainability, and climate-resilient farming. Innovative items like Ragi Sev and Ragi Samosa give a nutritious twist to familiar snacks using finger millet.
Nutritious meal options such as Chawal Chilka with Sabji and Madua Chilka with Sabji reflect traditional grain-based diets paired with seasonal vegetables for balanced nourishment.
